Overheating before thermostat opens. 120-130

Finally got the rebuilt B20 set up right mechanically. Took it around the block and it is a rocket. Thanks to all BB folks for your help.
Only problem is that it's overheating before the thermostat opens. The boiling water just boils into the overflow tank.
I tested the thermostat on the stove top last week and during that test it opened, and then closed again when I put it under cool water. Didn't have a thermometer to measure with precision. It simply doesn't open when installed. As well I may have had the radiator recored by a bogus shop last winter, so I ordered a new one from Skandix.
What degree thermostat do I need and where can I get one? IPD?
