Far more valuable would be a loss of coolant sensor, since many overheat incidents start with the coolant draining out through a broken hose. See the FAQ for tips.
The coolant temp gauge sensor is a simple thermistor that outputs resistance depending on temperature. A circuit that triggers once resistance reaches a certain point would meet your needs for an overheat alarm. See below:
