For the exhaust issue, replace what is rotten, don't bother trying to piece together rust dust. For the suspension, struts are a must if the car bounces, if the rear end of the car is sitting too low, then its probably bushings rather than springs. Inspect all front and rear suspension bushings, they don't cost much, they are a pain in the behind to replace.

Before trying to replace the valve cover gasket, torque down the valve cover nuts a bit and pressure wash, you'd be amazed how many times this makes the leak disappear.

Power steering, sorry, not enough detail to diagnose. Is the pump or the rack leaking?

For the A/C, If it isn't cooling, does the compressor clutch kick in and out anyway? Can you see fluid flow through the "eye" on top of the receiver dryer (next to the radiator)? If the compressor is cycling, you are probably dealing with a plugged expansion valve. Replace it, vacuum the system and refill with Freeze-12. If the A/C compressor doesn't engage, there may be a leak or an electrical issue.

Not sure when the O2 sensor was replaced last, but consider getting a mid 90's 302 mustang O2 sensor and splicing it into the existing harness. Lots cheaper this way. For the AMM, if the car runs better with it plugged in rather than unplugged, the AMM is fine, conversely, get a newer one off the bone yard.

For the body rust, if there aren't any holes, have them fixed, if they are "swiss", go to the bone yard and get new panels. Semi-decent paint jobs can be had for under $1K.

For the shifter console/E-brake console (assumption), spend the bucks and get them from the dealer... OUCH.

Sunroof, I'd scream UNCLE! Use the pieces that are left of the mechanism to jamb the roof lid in the closed position. Once done, from inside the car, use RTV to seal the seam completely shut. Now you won't have to worry about soaking wet seats any more!
