I would think that the highway trips every few weeks would keep it fresh. Just avoid short trips where the car doesn't have time to warm up completely and run for awhile. I have an old Chevelle that I store for months at a time, but occasionally I'll crank it up and let it run for a half hour or so. If you do only short trips, change the oil more often and expect to replace the exhaust system in a shorter period of time.
