Jumpering fuse 5 and 7 will not cause any of the symptom you mention, except the sparking.
The sparks are normal whenever a voltage (fuse 7) is connected to a load (fuse 5 and the two fuel pumps). Once the contact is firmly made, there should be no more sparks until the connection is broken.
Being surprised by the sparks may have made your jumper hand a little shaky, with several contacts producing several sparks. But the 5-7 jumpering affected nothing but the pumps. Try a new post if you have other problems.
