A/F ratio gauge - setting up and tuning 120-130

Hi Volvo people,

I am from sunny SA and would like to set up an a/f ratio gauge to the 122.
Previously i posted a similar thread and have done some research to see if i can source the gauge locally.
I am able to obtain a stand alone a/f ratio gauge but it does not come with the oxygen sensor. Can one use a generic universal sensor like a Bosch O2 sensor?

Now how does one use the a/f ratio gauge to properly tune the twin SU carbs?
I mean how would one know which carb to adjust to obtain the stoich a/f ratio?
