How much stop-leak is too much?

At best any stop leak will only be temporary.

What I would do is flush the system, replace with new coolant,disable the pressure cap, my personal preference is "Alumaseal" (seen it used on class 8 diesels with some success) Warm it up and add one tube. Be sure coolant is circulating through the heater. Do not enable the pressure cap until you can replace the heater core.

You may have to drill a small hole in the cap?

Sorry, no guarantee this will work! If its seeping, maybe. If its a fracture, then no!
