Do you do a wheel alignment after the control arm assemblies are changed 200 1991

I think, like Tony said, that you're not likely to notice much difference. But if you are going to do all of this it is best to get an alignment, yes.

However, I'd also like to recommend doing all of that work at the same time. It makes no sense to spread it out because you are going to have to disassemble half that stuff twice that way.
