I see no reason not to use a warning valve from a scrap vehicle, provided it shows no visible signs of leaking. Just make sure to use a proper flare nut wrench to avoid rounding off the corners of the flare nuts on the brake lines.

And yes, if you have to open the brake system for any reason (i.e. removing a brake line fitting) from either the caliper, master cylinder, or the warning valve, you MUST do a complete bleed of the brake system to make sure all the air is purged from the brake system.

This is also a good opportunity to replace all the brake fluid with some fresh stuff. Even in a supposedly 'closed system', brake fluid can absorb moisture from the atmosphere and deteriorate over time.
