I may be totally out on this, but AFAIK the CI system does not use a resistive temperature sensor for the injection system, the enrichment job is done by the warm up(aka control pressure) regulator.
The CI has a thermo time switch, which activates the cold start injector during cranking, depending on engine temperature, but the warm up/ enrichment is done by adjusting the control fuel pressure to the fuel distributor.
The thermo time switch is located under the manifold around #2.
Not sure about the gray wire sensor, may be for the dash temp gauge?
If idle is too high I would investigate the CIS system, which DOES have a resistive sensor with 2 wires (blue and red for an 83) connected to pins 9 and 11 on the CIS control box (bottom box in outside of passenger footwell)
According to chart- 5500ohms @ 32F, 800@ 50F, 190 @ 212F.
