I don't have an answer to your coolant temp, but I can relate a story regarding the calibration of the temp gauge. Many years ago after changing the clutch, due to brain fade I neglected to reconnect the body ground strap to the bell housing. Needless to say, when I started the engine, it grounded itself through the coolant temp gauge to the dash, frying the gauge. (Lots of spark and smoke). I finally found a donor instrument cluster from a PV544 and removed the temp gauge, but prior to installation, I brought it into the kitchen and with a pot of boiling water and the wife's candy thermometer I was able to calibrate the gauge as follows;
1st white line 167F/75C;
at 12:00 (straight up/down) 180F/82C;
2nd white line-before needle goes into the red portion of the gauge 212F/100C.
I'm running a 77C thermostat, so my needle is just to the right of the 1st white line on the gauge.
