You are going to want O-rings made of EPDM or SBR to remain compatible with glycol-based DOT 3 or 4 brake fluid.

A lot of commercially available O-rings are made for use in petroleum based fluids (ATF, hydraulic fluid, etc). These are mostly going to be Nitrile (NBR).

Using the wrong fluids with the wrong materials (either way) will lead to them failing pretty quickly.
