It is my experience with the LH2.2 system that disconnecting the coolant temp sensor creates infinitely high resistance and therefore makes the ECU think that the engine is cold resulting in a rich mixture required for starting. However once warmed up the engine will run very rich with black smoke, low power, stalling etc.
The reference to an out of spec signal causing a default to 68 degrees may refer to the LH2.4 systems which have a few more smarts. I think your car has the LH 2.2 system though.
