Temp Guage or Sender problem 700 1988

I need help with resolving why my temp guage registers properly upon engine startup and then and soon as I thottle it, it starts to jerk and eventually falls to zero after 15 - 30 sec. Sometimes, it will register longer but still the same fate.

Checked grounding...OK - checked plug at sensor...OK - Checked for power at sensor plug...OK before and after problem occurs - pulled dash & checked guage connections...OK

LIved with it for 4 weeks - but I worry about overheating in this hot weather with A/C as I can't read the guage - Cooling system is fairly new so minimal concern, but still a concern.

should I replace the sensor or temp guage or ????
