If the clutch is going CLICK and turning off, then I think what is going on is your A/c is discharged to the point that it's almost tripping off on low pressure. When you rev it up, it pumps a little more refrigerant around, and trips out the system on low pressure. Then it recovers after a bit or when you slow the compressor speed down.
Usually A/C systems will cycle like this when they're discharged. If there's no obvious oily spot (usually a fitting or at the compressor) then have the system recharged using a fluorescent dye. This will pinpoint the leak and it can be fixed as needed.
