That's exactly what I was going to suggest! Yeah, a shopping cart is a tough, stable platform with the addition of a few 2X4s. Definitely strong enough to do what you need. Just add wood blocks to make a stable cradle under the mounts.
That said, there's nothing wrong with storing an engine on a proper engine stand for a long time. That's what they're designed to do. Remember to bag it up to keep dust out of the manifolds.
