The bargain paint jobs are a hit-and-miss. It all depends on the shop. Take a look at some of the ones they just finished, and some of the ones in progress. Have a talk with the folks there, and get a feel whether they give a damn about their work or not.
Removing as much of the trim as possible, along with anything else readily removable will give better results, as it's one less thing to mask. They should appreciate that too, as it's less work for them. Above all, don't expect a paint job that's 100% perfect. The goal here is just to get a pretty decent job for cheap.
If there's anything else too, check your local BBB for the shop's ratings too. FWIW, around here, all of the Earl Scheibs around here in SoCal are "unacceptable". :)
