She should:
1) check that coolant level is correct both hot and cold.
2) check owner's manual to make sure there is not a special technique for filling the system, to prevent air bubbles in it (This isn't a problem for Volvos, but can be in a lot of other cars- special bleeding techniques may be needed)
3) replace the thermostat, since they're cheap
4) check any vacuum lines to the climate control system- could be a vacuum operated system as Volvo and many other cars use, and a split hose could give erratic results.
5) go back to that Jippy Lube place for her next oil change, and require that they fix it right when given the opportunity to. If they won't, she still needs it fixed, and should go to the dealer or a good shop, then present the bill to the clowns who stripped it. Small claims court is the next step. They really ought to take care of this ASAP. She, however, needs to make the time to deal with it, since it's not a 10 minute job.
The pan should be repairable in place- should not need to come off the car. There are plug repair kits that allow the holes to be rethreaded without additional removal work. Obviously, the oil needs to be drained at the time this work is done, so next oil change is a good opportunity.
