To use the 1991 engine, use the 1987 distributor, throttle body, and Idle Air Controller. Although you can leave the late injectors (from LH 2.4), in the engine, I would just change the intake manifold as Chuck (porkface) wrote. If you change the intake manifold, you will be changing both the injectors and the throttle body.
The Coolant Temperature Sensor in the head does not have to change, nor does the Temperature Gauge Sender. If you were installing the late engine in a 1986 or earlier car, you would need to change the Temperature Sender.
Since the bell housing is an integral part of the transmission, I would not change it. Just leave the RPM sensor in place, and it pretty well fills the hole.
Obviously you will be using the 1987 engine wiring harness. If you haven't replaced it, you can rebuild it with parts from the 1991 engine wiring harness.
