how werks a valve? 120-130

I'm kind of lost on how these valves work myself. I just picked one up from a parts-pick which I'm hoping to recondition for a spare, as I know these little puppies are expensive now.

When it's cold inside the car, I pull my heat lever down, my fan on, and nice hot air comes in. This thermo-coupled valve thing however -- what is it's function? Does it close down the water flow as the temp inside the air-box gets hotter? What's the need for this valve?
