There are lots of torque converters for the BW35 as it was widely used in lots of different applications. The torque converters are different by diameter, fluid capacity, torque capacity, engine to be mated to, etc...
The "air-cooled" and "shroud" questions are new to me, however. Doesn't mean they are inaccurate, just that I've never heard of such a thing (of course, I avoid automatics like the plague). I suppose their eye could be "skipping" down to the VW application line in their book.
Ask another shop. Tell them the car it is in and see what they say. Heck, try all of them in the phone book!
After answering all their questions and asking your own, you will understand the process a lot better!
