Your correlation between the defrost and P0015 makes absolutely no sense, except that the AC is also on with the defrost cycle which could have an effect on the engine idle rpm. The VVT can get plugged with sludge, but that really takes a long time to build up.
Take off the oil filler cap and inspect the cams, if they appear to be dirty and brown from sludge, you might want to invest in a bottle of AutoRx to safely remove any sludge. It is a 1,000 mile procedure, but it will clean everything inside the crank and PCV system. If you drive 12K a year, then it is worth a shot. After the Rx, start using synthetic engine oil which has less tendancy to leave sludge behind.
Please get in the habit of changing your own oil. I have seen dealers trying to cut costs by using dino oil, even in new cars.
