Bilsteins: do they break in? 850

I think I need new struts and am currently trying to decide which ones to get. I am considering Bilsteins but am concerned about just the problem you are having. Since most of my driving is in town I don't want the ride to get too harsh. I also don't know anybody who has them. What tire and wheel combination are you using? I may just end up sticking with OEM.
