See Caliper Repair in the 700/900 FAQ. The notes on rebuilding the 900 Girling front rotors will apply to your 700 rotors.
FCP Groton normally lists the correct rotor based on model, year, caliper and diameter. When buying rotors it's always a good idea to measure the diameter of the ones on the car, as you've done. Offset, thickness and hub size are normally not an issue with rotors listed for your Volvo. Due to your shipping distance and the fact your 700 may not be a US market car, I would verify those measurements in advance. That's especially true if you are dealing with a supplier that doesn't specialize in Volvo parts.
What brand or style of rotor to buy is a whole other topic. In my simple world, if you choose everyday pads (like PBR Deluxe) then everyday rotors (like plain ATE or unslotted Brembo) would seem appropriate unless you have specific braking issues like brake fade. Others will certainly have their favorites.
