head job: to grind or not to grind

Here's what I would do. Check the head for flat with a machinists straight edge, if good, clean with 320 wet-dry on a block of wood, and re-install it. It will be fine.
I've done hundreds of valve grinds, on all sorts of engines over the years. Volvo OHC rarely give trouble. If it has no symptoms, leave it alone. Don't even try to clean the pistons - just vacuum any loose bits out.
Oh - and don't even think of lapping used valves and seats together.
