preparing my 72E for a respray 1800

looking for some advice.
I have a 72E that has a solid body. I bought it as a shell that was sitting on stands in a heated garage since 1983. Still has the 1973 license plates. The Po stripped it down and rebuilt the body. Volvo labels are on the new cross-members and some body panels. He really did a good job welding wherever was needed.
I have to finish the body, paint and reconstruct.
There is tons of filler/glazing on the body. I assume this a factory filler as the paint is original. Some type of prefill or leveler over good steel.

Should I grind right down to the metal before giving it to a pro to paint. The filler seems really thick in places. Not sure if the paint guy would benefit from seeing where all the filler was applied or if it matters.

This is going to be a super looking car when done.
