Electric Fan conversion causes car temp to be unsteady

After the installation of an electric fan into our 765Ti the temperature goes a hair past the 12 o'clock position, then (I assume) the fan turns on and the temp jumps back down to about 11 o'clock. Before the electric fan the temp was rock steady at the noon position. I installed the fan switch right below the radiator inlet (upper hose). Is there a better place to mount the switch that will make the temp more steady, like when the car had the mechanical fan?
