how to check if fan clutch is working? 700 1990

someone once told me that when the car is on the highway and cruising around 50+ mph or something (varies with each car) the fan clutch disengages, because it's not useful for it to be on when there's already the air from the front of the car going in by itself due to the wind.

is this true? and how do i tell if it's working? i can't very well look under the hood of the car while i'm doing 50mph ;-)

i looked at the FAQ about this, and there is something kind of referring to the fan clutch, but i'm not sure if that's what it's referring to or if i'm completely wrong about this and the fan is actually always on.
