You can get away with a 205 section tire on a 7" wheel, but I wouldn't with a 55 aspect ratio... You are right in wanting to find 6" wheels.
I've got 205/70-15 on 7" wheels on my 1800, and there were definite clearance issues. Granted, my tires are a good bit too big. But clearance issues were at the top rear spring mount, and rear inner front fender. Some liberal hammer work up front and cutting at the rear and they are fine. Wheels are Jeep as seen below.
But I really think for a street driven car, 15x6 wheels with 195/65 tires is about the best setup as a compromise between performance, looks, and driveability.
