With dino oils they have to use additives to increase the viscosity spread. That is, more additives in a 5W then in 10W. The additives would break down faster so 5W would not last as long as a 10W. The recommended oils at different temps reflect the point where the cold starting benefits outweigh the breakdown rate.
That's how it used to be for dino oils, they probably have improved enough by now that it's not as much of an issue.
Synthetic oils don't have this limitation so one can use a sythetic 0w-30 any time.
