In theory your method should work but in practice there are many things that can go wrong, hence the usual practice of dating, courting, proposing and ultimately marrying. You really need a second person to bleed brakes.
My method differs a bit from yours. I attach the tube to the still-closed bleed nipple, put a bit of fluid in the bottom of a jar and place the other end of the tube into the jar's fluid. I have Wendy sit in the driver's seat and instruct her that when I say 'press' she is to evenly and at moderate speed depress the pedal toward the floor. When she gets near the bottom she says 'down' but continues pressing to the floor.
Here is the routine:
Me: "Press".
Wendy: Starts to press.
Me: As soon as she starts, I open the bleed nipple.
Wendy: "Down" (but continues pressing).
Me: I close the bleed nipple, then say "Release".
Wendy: Releases the brake pedal and awaits my next 'Press' instruction.
It is also a nice chance to bond with the little lady.
