When I do the head gasket...

Decarbon the chambers and piston tops while the head is off. Inspect the head thoroughly for cracks. Lay a straight edge along the length of the head. If the head is not obviously damaged, you can probably go back together without sending it to the machine shop. If you have any doubts at all about the integrity of the head, send it to a machinist.

Yes, do get a complete top end rebuild set. You will use most of the gaskets and seals they send.

Yes, do renew belts, hoses, thermostat, and anything you find that looks like it needs attention. Wiring comes to mind. If the water pump is original, I'd replace that too.

There is a shop out of Florida that has been selling reconditioned heads for $300 on eBay. You may not be able to do it for less, depending on what needs to be done to your head. They do require a core return. See item # 180195990047.
