Wow you waited 2 whole weeks...I was in for over 2 years :-). Seriously though, cc'ing a head means to measure the volume of the combustion chamber. This allows you to compute the static compression ratio. To do this you can either use a burette or a syringe. Get a 4" square piece of glass, smear some grease around the surface of the head so the glass will seal the glass against the head. Leave a little opening and then fill the combustion chamber with water and record the volume. You use this in your calculation.
The lack of a hardened seat is a problem with modern fuels that lack the lubricating properties of lead. I don't know what it would cost to have them installed, but if the rest of the head is OK, I'd do it.
