While the head is off - B30 140-160 1971

How much do you want to spend? Before you're done it might be completely rebuilt.
Have the shop measure the head for flatness - I would doubt very much that it needs surfacing, and if their broach is poorly set-up they will probably not reproduce the surface finish the factory achieved. While planing the head about .050 would produce more power, it's not advised with old piston rings.
The lifters will be worn for sure. That said, who cares? If the rocker arm adjusting studs are all relatively the same amount out of the arms, then the wear is normal.
You might not even want to do a valve grind, because if the engine is low mileage, little will be gained there either.
Most shops will do all this work to protect their reputation (such as it might be) and not your wallet.
You blew a head gasket. Replace the head gasket. Everything else is wishful thinking.
