I have removed multiple exhaust manifolds without breaking a stud. I start out with a ratchet and socket, if I come across one that feels like "toffee", ie, tight and reluctant, I break out the pin-point propane torch and heat up the nut so it expands and can be removed easily.

ps. If you do snap a stud (rare), your best bet is to remove the head and hand it off to a machine shop.
