If I may add to the above: while the head is out of the car, you might as well do the valves and valve seals too. Don't let the shop grind the exhaust valves as they are Stellite coated. They can only be lapped to their seats.
Check and set your valve lash or clearances after the seals/reseating. Then, after the clearances are properly set, replace the little rubber hushers which were, once upon a time, under the lifters/tappets.
Makes a big difference in smoothness, quietness, and power.
