overheating, next drivability issue to tackle 140-160 1968

I've managed to borrow a thermocouple from work to take some measurements of the engine while warm. Here's what I found.

Outside of upper radiator hose: 105 F
Coolant in resevoir: 80 F
Head bolt 1 (front of engine): 135 F
Head bolt 2: 147 F
Head bolt 3: 167 F
Head bolt 4: 150 F
Head bolt 5 (rear on engine): 144 F
Exterior of coolant sensor: 178 F

I'm not quite sure why the coolant in the resevoir was so cool while the coolant temp was much warmer than the engine bolts, but based on the above numbers, I'm fairly convinced the engine is running at normal temperatures. I'm still going to flush the system, but this means I'll be concentrating on finding the issue with the gauges. Opinions?
