a quick Google search brought up the one pictured below. Sorry I can't offer credit to who's it is. Sounds to me though, like you want to get more extreme... so, I rather think you're largely going to be on your own. Nice that you have several spares to mess with...

There are several companies that specialize in automotive gauges. Just browsing their websites will offer up plenty of ideas... egauges.com might be a good place to start.

And of course, I do think tranny and differential temp gauges would be silly... you're hardly dealing with a F1 Ferrari here... but hey, it could look cool, and if that's what you want, go for it. Just be sure the gauge range is in the right ball park. I'd have no idea how hot those get, but my guess is not very hot at all.
