Just take the ignition wire off the Coil so the engine wont start.
Most gauges 'Hold' the highest pressure as the engine is cranked so you don't need to have an additional person. Just screw in the gauge, crank it for about 3 seconds, get out and check it. Then press the bleeder to zero out the gauge and move onto the next one.
