This procedure involves exchanging all the ATF in the trans with new oil. The top trans cooler line is removed and connected to a machine which holds fresh oil in a bladder and stores the old oil in the other side of the bladder. The car is started an put in drive and the fluid exchanged. There is a small sight tube which allows one to tell when the old oil is out and the new oil is in.
This procedure can be seen on Bay 13.
When you change the oil in the trans by draining it, the torque converter is still full of old oil. Most cars do not have a converter drain plug, Mercedes does, or at least did when I owned one.
