High NOx implies a lean mixture.. maybe a hotter combustion chamber. So while replacing your thermostat would be a great idea (and it's so cheap and simple too), I don't think it will solve your problem.
Which ignition system do you have? Bosch (red/brown/orange cap) or Chrysler (white distributor cap)?
The Chrysler system is designed to run quite lean (hence the name "lean burn") and this can tax a catalytic converter quite a bit.
Assuming the rest of your car is okay (i.e. no vaccum leaks, fuel mixture is okay, etc) it may just be a worn out catalytic converter.
