Well, once you have the head off, you can check the cylinder bores for wear. You will also want to check the head for warpage, and see if the camshaft binds at all. (Sometimes the cam can start to bind with bad head warpage)
I think that usually, the test for rings is to do a leakdown test, but you have to get your headgasket fixed first. I guess a leakdown test would also point out valve seating problems.
I am not a mechanic, so maybe there is something you can do to check the rings while the head is off.
