Weber tuning 120-130

I was disappointed in the Weber book I got (can't recall the name, not the one you mention). I thought it would have more advice on tuning. Instead, it had very detailed instructions on how to take apart about 10 different kinds of Weber carbs. And about 1 page of very generalized instructions on tuning all the models, 1/2 of which dealt with the idle specifically.

Still, I supposedly have enough information gleaned from here and there to be able to tune them based on what the mixture is doing at various operating states. I even installed a wideband fuel/air meter to assist. But the problem is that it shows very inconsistent things happening. Sometimes in say 3rd gear at 2000 rpm on level ground it will show 14:1, sometimes under the same conditions it will be around 10:1. I've added a fuel pressure regulator and tried various pressures with little impact, although I figure I would have had fuel overflow out of the carbs if it was too high.
