Touching the unconnected positive terminal to a grounded body part would produce no spark as there would be no voltage present because the positive battery post is not in the circuit.

But upon reflection I guess if you touched the end of the wrench to a metal body part while tightening up the positive last that would be a big spark. So I guess there is a reason after all for disconnecting the negative first and connecting last.
