Cold driving problem 200 1987

Ok, I am going to get to the bottom of this soon. My '87 240 has a cold driving problem that I have been unable to solve but I have some ideas on what to try but I don't know what order to do them in.

Symptoms:
Car starts fine, idles fine, but when accelerating will just suddenly have no power. usually in Second gear it just sits at about 25 mph and will accelerate very very slowly, and jumpy. I use the clutch to compensate as much as possible. Symptoms are worse when temp is outside. After about a mile of driving, sometimes even less, the car will drive completely normal.

What I have done:
Replaced Plugs, wires, Cap and roter, AMM, Fuel Pressure Regulator, and intake thermistat. No vacuum leaks.

Stuff I could try:
Ignition Power Stage
Idle Air Control - The car seem to idle fine but never has a fast idle when cold...
EUC - I really know nothing about this.
Injectors

I would appreciate any guidance you can give me. I don't really know where to start here and it is expensive to just replace parts.

Other things that I don't know are related but exist-

in the winter I get way worse gas milage than in the summer, by at least 5 miles to the gallon.

At high elevations, car doesn't have alot of power going up hills.

Is it possible that i got a bad AMM when I replaced it?
