Should I Remove A/C From My 1972 ES 1800

Yea... I'd say yank it out. THem nice corner windas open all the way backwards, and although doing that does make the appearance of ears on your car, it blows lots of cool outside air in...

If/when you do remove the system, do so carefully... those are somewhat hard to come by, and probably worth some money to someone who really wants it. Might even be good to document the exact location of any mounting points, plumbing and wiring (pictures and/or drawn diagrams etc...), and keep all the parts together so it can someday be retrofitted to someone else's car. You can probably sell the system for enough to cover a top notch batch of tune up parts and maybe some brake pads or something.
