With the AMM unplugged, the car should idle fine. If you try to drive it that way however there is not much power and you have to accelerate very gently to keep from stalling the engine. This is called limp home mode since the computer defaults to rich mixture with the AMM unplugged. Also check the AMM connector to make sure that the little pins are in good shape. Unplugging the AMM is a quick check to rule it out. You might also want to check for vacuum leaks. It's been a while since I've looked at a B28 V6. Interesting engine. Has yours been fairly reliable?
Good luck,
Dave
