Mysterious 'Low Coolant' lamp

I think your coolant level is just at the minimum and triggers the switch when cold. By the time you get out of the driveway you have jogged the level up enough to turn the light switch off. Have you tried topping the coolant level up just a bit more? That will likely cure your problem (unless the sensor is actually malfunctioning, but I bet it isn't).
