I don't know much about the problems, but I've thought about doing this to my 1967 122 (so your question is once again legal fo rthe brickboard). My car is very loud (in the interior) on the road and any additional dampening would be nice. I think some foams (housing construction variety) will keep moisture out, some let moisture in, I'm not sure which kind is which or where you could find which kind.
As far as your reinforcement, cuting and welding are the most reliable ways to add strength, but keeping moisture out of there with the correct foam would be a nice insurance policy.
