Those fingers on the pressure plate need to be about "level" to have a nicely operating and feeling clutch pedal. Just think of a teeter totter perfectly balanced and in the center. Only problem is to make this adjustment you need some tools and the tranny out of the car. If those fingers are at a level position with the pressure plate torqued then the pedal pressure will be less and the travel from just about engaged to fully engaged will be MUCH less. If you old disc is worn then the fingers will be much higher. Using a thicker (or newer) disc might get those fingers back where they need to be.
Not to be critical about Centerforce but over the years I've removed all of their products from my car. It is substandard and the quality control is horrible at best. You might consider SPEC clutches out of Alabama. McCloud is also a great product...just ask the racers.
